Vegetarian Cold Noodle Salad
- AMOY Frozen Lo Mein Noodles 2.5 lbs
- Red and Yellow Bell Peppers, julienne 1 cup
- Parsley, chopped 1 Tbsp
- Ginger, shredded 1 Tbsp
- Garlic, chopped 1/4 tsp
- Scallions, sliced 1/2 cup
- Carrot, julienne 1/4 cup
- Cucumber, julienne 1/4 cup
- Broccoli, garnish 1-2 stalk
Dressing
- AMOY Gold Label Dark Soy Sauce 4 oz
- AMOY Gold Label Light Soy Sauce 2 oz
- Sugar 4 Tbsp
- Sesame Oil 3 Tbsp
- Rice Wine Vinegar 1.5 oz
- Canola Oil 2 oz
- Amoy Frozen Lo Mein Noodles: Blanch in boiling water for 4-5 minutes, drain and cool in icy water. Pre-mix all the dressing ingredients. Combine all the ingredients and add the pre-mixed dressing. Mix well and chill.
