Whole Grain Noodle Caprese
- 16 oz. Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave)
- 1 cup Grape tomatoes, halved
- 1 cup Mozzarella pearls
- ½ cup Red onion, sliced
- ½ cup Basil, chiffonade
- ¼ cup Olive oil
- 1 tsp. Garlic, minced
- 1 Tbsp. Balsamic glaze
- TT Salt and Pepper
- Combine all ingredients in a mixing bowl (excluding the balsamic glaze) and toss to combine.
- Refrigerate for up to 4 hours before serving. Garnish with balsamic glaze and serve immediately.
