Wheat Thai Peanut Soba Salad
  1. 16 oz. Whole Wheat noodles, prepared according to package directions (thawed and ready to use, boil or microwave)
  2. ½ cup Red onion, sliced
  3. ½ cup Jalapeños, sliced
  4. ½ cup Cucumber, seeded and sliced
  5. ½ cup Sweet chili sauce
  6. ¼ cup Carrots, shredded
  7. ¼ cup Peanuts, shelled
  1. Combine all ingredients in a mixing bowl and toss to incorporate.
  2. Refrigerate for up to 4 hours before serving.
